Hey All!
I don’t know if anyone else has noticed, but it’s finally starting to look a bit like spring. (Sorry if it snows tomorrow…) I was out walking around the other day and all I could smell was barbeque. That got me to thinking: what kind of flavours do I feel like once it starts to thaw out? Something refreshing… something tangy… something light. So here’s a little lunch recipe for anyone who’s got the spring spirit.
Cheese Sandwich!
What you’ll need:
1 Pear (whatever you like… I’m a fan of d’anjou)
1 Lime (or lime juice)
Honey
Cheese (I like Jarlsberg for this…or some variety of swiss)
Baby spinach (or arugula or mixed greens)
Butter
Bread (French, Rye, Sourdough.. something crusty and delicious)
Prep:
Slice pear into coins or flat strips, chop your lime in half (or open your bottle of lime juice) and cut some slices of cheese. Warm a little bit of butter in a pan, add a squeeze of lime and your pears. Sauté until the pears are warm and tender. Remove the pears from the pan (leave the juice for now) and arrange them on one piece of bread and cover them with slices of cheese. Butter another slice of bread. Place them under the broiler for a minute or so to brown the bread and melt the cheese. Add your leafy stuff and drizzle the juices from the pan on top. Add a few drops of honey if you’d like. Mash bread together. Mash sandwich into mouth. Smile a bit.
And there you have it! One spring inspired, fairly quick lunch that will impress your friends, enemies and loved ones. Now if only you could get that weird stain off the carpet…
